This delightful creation combines the goodness of ragi (finger millet) with aromatic spices, offering a meal that's both satisfying to the palate and beneficial to your health. In this blog post, we're diving into the art of crafting a Ragi Sangoti Rice dish that celebrates the beauty of fusion cuisine.

Ø  What is Ragi Sangati Rice?

Ragi Sangati Rice is a wholesome dish that brings together the nutritional richness of ragi and the savory appeal of spices. This South Indian creation is a symphony of textures and tastes that elevates the concept of comfort food to a new level.

Ø  Ingredients You'll Need:

- 1 cup ragi flour (finger millet flour)

- 1/2 cup cooked rice

- 1 onion, finely chopped

- 1 tomato, chopped

- 1 green chili, finely chopped (adjust to taste)

- 2 cloves garlic, minced

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- A pinch of hing

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1 tablespoon oil or ghee

- Salt to taste

- Fresh coriander leaves, chopped, for garnish

Ø Step-by-Step Guide:

1. Prepare the Ragi Dough:

   - In a mixing bowl, combine the ragi flour with water to form a smooth and pliable dough. Set it aside.

2. Cook the Rice:

   - Cook the rice and let it cool to room temperature.

3. Create the Ragi Sangati:

   - Take a small portion of the ragi dough and flatten it using your palms. Place a spoonful of cooked rice in the center and fold the dough to encase the rice, creating a stuffed ball. Repeat this process to make multiple sangiti balls.

4. Steam the Sangati:

   - Steam the prepared sangoti balls in a steamer for about 15-20 minutes, or until they are cooked and firm.

5. Prepare the Spiced Mix:

   - In a pan, heat oil or ghee over medium heat.

   - Add the mustard seeds and cumin seeds. Let them splutter.

   - Add the chopped onion, minced garlic, and green chili. Sauté until the onion turns translucent.

6. Add Aromatics and Spices:

   - Stir in the chopped tomato and cook until it softens and blends.

   - Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes to let the spices infuse.

7. Assemble the Dish:

   - Arrange the steamed sangoti balls on a serving platter.

8. Pour the Spiced Mix:

   - Pour the prepared spiced mix over the sangati balls, ensuring they are coated with the flavorful spices.

9. Garnish and Enjoy:

   - Garnish the Ragi Sangoti Rice with freshly chopped coriander leaves for a burst of freshness.
