      Millet Khichdi, a delightful fusion, takes the traditional comfort of khichdi and infuses it with the nutritional power of millets. Ø  What is Millet Khichdi?

       Millet Khichdi is a marriage of two nutritional powerhouses: millets and the comfort of khichdi. It combines the wholesome goodness of various millet grains with lentils and aromatic spices to create a dish that's as hearty as it is nourishing.

 

Ø  Ingredients You'll Need:

- 1 cup mixed millets (such as foxtail millet, barnyard millet, and little millet)

- 1/2 cup split yellow pigeon peas (Toor dal)

- 1 onion, finely chopped

- 1 tomato, chopped

- 1 green chili, finely chopped (adjust to taste)

- 2 cloves garlic, minced

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- A pinch of hing

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1 tablespoon ghee or oil

- Salt to taste

- Fresh coriander leaves, chopped, for garnish

 

Ø  Step-by-Step Guide:

1. Rinse Millets and Lentils:

   - Rinse the mixed millets and toor dal under cold water until the water runs clear.

2. Soak Millets and Lentils:

   - Soak the rinsed millets and toor dal in water for about 30 minutes. Drain before use.

3. Cook Millets and Lentils:

   - In a pressure cooker, combine the soaked millets and toor dal with water. Pressure cooks for about 3-4 whistles or until they are soft and cooked.

4. Prepare the Aromatics:

   - In a pan, heat ghee or oil over medium heat.

   - Add the mustard seeds and cumin seeds. Let them splutter.

   - Add the chopped onion, minced garlic, and green chili. Sauté until the onion turns translucent.

5. Add Aromatics and Spices:

   - Stir in the chopped tomato and cook until it softens and melds.

   - Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes to let the spices infuse.

6. Combine Millets and Lentils:

   - Once the millets and lentils are cooked, add them to the pan with the spiced mix. Mix everything together gently.

7. Simmer to Perfection:

   - Allow the Millet Khichdi to simmer on low heat for about 10-15 minutes, allowing the flavors to meld and the consistency to thicken.
