Cool and Creamy Delight: Mastering the Art of Curd Rice

      Curd rice, known as "Thayir Sadam" in South India, is a quintessential comfort food that combines the soothing goodness of yogurt with the satisfying heartiness of rice. With its simple ingredients and delightful flavors, curd rice is a dish that not only satiates your taste buds but also offers a cooling and nourishing experience. Ingredients You'll Need:

- 1 cup cooked rice (preferably short-grain rice)

- 1 cup plain yogurt (curd)

- 1/4 cup milk (adjust to desired consistency)

- 1 tablespoon ghee (clarified butter)

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- 1-2 green chilies, finely chopped (adjust to taste)

- A few curry leaves

- A pinch of hing

- 1/4 cup grated carrots

- 1/4 cup chopped cucumber

- 2 tablespoons chopped coriander leaves

- Salt to taste

 

Ø  Step-by-Step Guide:

1. Cook the Rice:

   - Start by cooking the rice until it's soft and fluffy. You can use a rice cooker, stovetop, or any preferred method.

2. Let the Rice Cool:

   - Once the rice is cooked, allow it to cool down to room temperature.

3. Prepare the Curd Base:

   - In a mixing bowl, whisk the plain yogurt until smooth. Add a splash of milk to achieve the desired consistency.

4. Mix Rice and Curd:

   - Gently mix the cooled cooked rice into the yogurt base. Use a gentle folding motion to ensure the rice is evenly coated with the yogurt.

5. Tempering the Flavors:

   - In a small pan, heat the ghee over medium heat.

   - Add the mustard seeds and let them splutter.

   - Add the cumin seeds, chopped green chilies, curry leaves, and Hing. Sauté for a minute until fragrant.

6. Combine and Season:

   - Pour the tempering mixture over the curd and rice mixture.

   - Add grated carrots, chopped cucumber, chopped coriander leaves, and salt. Mix everything together gently.

7. Chill and Serve:

   - Place the curd rice in the refrigerator for about 20-30 minutes to chill.

   - Serve the chilled curd rice as a refreshing main dish or side.

8. Garnish and Enjoy:

   - Just before serving, you can garnish the curd rice with additional chopped coriander leaves for a burst of freshness.
