Bajre Ka Soyta: Savor the Traditional Flavors of Pearl Millet

       Bajra soyta, a traditional dish from Rajasthan, India, brings together the wholesomeness of pearl millet (bajra) with the aromatic blend of spices. Ø  Ingredients You'll Need:

- 1 cup pearl millet (bajra)

- 1/2 cup split yellow pigeon peas (toor dal)

- 1 medium onion, finely chopped

- 1 medium tomato, chopped

- 2-3 cloves garlic, minced

- 1 teaspoon ginger, grated

- 1 green chili, finely chopped (adjust to taste)

- 1 teaspoon cumin seeds

- 1/2 teaspoon mustard seeds

- A pinch of hing

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- Salt to taste

- 2 tablespoons oil or ghee

- Fresh coriander leaves, chopped, for garnish

 

Ø  Step-by-Step Guide:

1. Prepare the Bajra and Dal:

   - Rinse the pearl millet and toor dal under cold water. Soak them together in water for about 2 hours. Drain before use.

2. Cook the Bajra and Dal:

   - In a pressure cooker, add the soaked bajra and toor dal along with 4 cups of water. Pressure cook for about 4-5 whistles or until they are soft and cooked.

3. Tempering the Flavors:

   - In a large pan, heat oil or ghee over medium heat.

   - Add the cumin seeds and mustard seeds. Let them splutter.

   - Add the hing, minced garlic, and grated ginger. Sauté for a minute until fragrant.

4. Add Aromatics and Spices:

   - Stir in the chopped onion and green chili. Sauté until the onion turns translucent.

   - Add the chopped tomato and cook until it softens and blends.

5. Infuse Flavor:

   - Add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a few minutes to let the spices release their flavors.

6. Combine with Bajra and Dal:

   - Add the cooked bajra and toor dal to the pan. Mix everything together to coat the grains with the aromatic spice blend.

7. Simmer to Perfection:

   - Add water as needed to achieve your desired consistency. Let the bajra soyta simmer for about 10-15 minutes, allowing the flavors to meld.

8. Garnish and Serve:

   - Once the bajra soyta reaches the desired consistency, remove it from heat.

   - Garnish with freshly chopped coriander leaves for a burst of freshness.
